I recommend trying to make Gunkanmaki sometimes. It is much easier for beginners to make gunkanmaki than sushi rolls. The shape is also great for holding ingredients that would be easily dropped in any other form.

2-Delicious-Type of Cucumber Sushi Roll (Vegetarian/ Gluten-free)

Today I introduce you to “2-Delicious-Type of Cucumber Sushi Roll”. Most people know about sushi rolls wrapped with dried seaweed. But this roll is wrapped with thin fried egg. The other cucumber roll is made with the rice side out. I think this is more colorful than regular sushi rolls, and it looks fancy. It is a very healthy and delicious dish!!

When you make sushi rolls, you need a Makisu which is a bamboo mat, to make a good shape. You can buy a Makisu at many Asian supermarkets and also on  Amazon.

Make sushi rice vinegar with rice vinegar, sugar and salt. Mix the sushi rice vinegar and cooked rice. (You can buy some cooked rice. Also I have a pan cooked rice recipe. If you have a rice cooker, you might want to use it.)

Make thin fried egg (mix with slurry so as not to break easily). Spread the sushi rice on the egg on the Makisu. Place the cucumber and roll up.

To make cucumber inside-out sushi roll, spread the sushi rice on the dried seaweed. Place it rice side down on a piece of parchment paper on the Makisu, put the cucumber and roll up.

Egg and Vegetables Sushi Roll (Vegetarian/Gluten-Free)

Today, I will introduce you to a great homemade sushi roll, the “Egg and Vegetable Sushi Roll.” For filling I used egg, spinach, carrot and Shiitake mushrooms. I seasoned the filling deliciously so you don’t need to put it in soy sauce when you eat.

In the PDF recipe, I explain with easy instructions how to make sushi rolls with a great shape and I provide you with detailed pictures (and some special tips) so you can do it even if this is your first time making a sushi roll.

You may think making sushi is too hard until you learn the tricks to doing it well. It is definitely worth it to learn. However, if you want you can skip the rice cooking process if you can get prepared steamed rice. And also you can pick easy ingredients for sushi fillings such as avocado, cucumber, smoked salmon, Sashimi and so on. This egg and vegetables filling recipe is actually what I grew up with. I think it is the best.

First, you wash dried rice like you wash vegetables before you cook it to get rid of dust and to polish the rice. Polishing rice makes it digest smoothly when we eat it. And also washing rice brings us great taste and great final presentation. Lately, some people say we don’t need to wash rice as hard as we used to because the technology of rice polish is getting better. In addition, if you use no-wash rice “Musen-Mai”, you don’t need to wash. You can also use brown rice and multigrain rice instead of white rice if you want.

Lately, I made “Thin-Fried-Egg Roll Sushi” instead of wrapping with dried seaweed. This is also delicious!!

10 leaves Spinach (frozen one is okay)

2/3 cup Kelp Dashi Stock (any kind is okay)

Homemade Vegetable Sushi Roll (Vegan/Vegetarian/Gluten Free)

Today I introduce you to “Homemade Sushi Rolls”.

In Japan, many restaurants serve great delicious Sushi, but my mother also often cooked Sushi Rolls, Inari Sushi and Chirashi Sushi by herself. We can change the ingredients and the seasonings as we like so I love homemade Sushi.

In this recipe, I used carrot, Shiitake mushroom and cucumber as the filling. And when I cook the carrot and mushrooms, I used kelp Dashi stock. So this is a meatless and eggless dish.

Of course you can use any kind of ingredients such as shrimp, chicken, beef, ham, cheese, fried egg, canned Tuna, spinach and so on.

In addition, you can make an adjustment for the seasoning of Sushi rice. If you don’t like the taste of vinegary sushi rice, you can reduce the rice vinegar. If you want more seasoning, you can add more sugar and salt.

The recipe is not complicated. It is easy, great to cook with kids, and is a wonderful dish for a potluck party!!

Simple Finger Food “Sushi Canapé” (Gluten-Free)

This “Sushi Canapé” recipe is totally original and great for a potluck. The ingredients are easy and it is a simple finger food.

The manner for making a sushi roll for this dish is not traditional. I came up with an easy way to roll which everybody can do without fail. But the taste is totally like regular sushi! You can top it with whatever you want such as smoke salmon, fish row, vegetables and so on. Once you know this recipe, you can serve Japanese sushi to your family and friends!

{Ingredients (15~20 canapés)}

2 pints Steamed Rice

3 beaten eggs

¼ lb. Ground Chicken

1 Avocado

¼ tsp. Wasabi Paste or Organic Wasabi Powder(combine with water to make Wasabi paste)

3~4 pieces Dried Seaweed for Sushi

50 ml Rice Vinegar

2 Tbsp. Sugar (total)

1 ¼ tsp. Salt (total)

Gomoku-Chirashi (Vegetarian/Gluten-Free)

Gomoku-Chirashi is a traditional Japanese home dish which is delicious and nutritious, and a kind of Chirashi-sushi. We enjoy it at parties with family at home, such as on New Year and Girl’s day (March 3rd).

The recipe here does not use fish or fish roe, but rather vegetables. We think dishes should have colorful ingredients such as red, green, yellow, brown and white so you can use any colorful vegetables you want.

Before the Japanese had refrigerators they used this recipe to preserve food.


{Ingredients for Sushi-Rice (For 2 people)}
